Pastured Pork, Forest Pigs and Other Happy Hogs
Town of Schleswig Town Hall
21935 Rockville Road, Kiel, WI 53042
Will Winter, certified holistic veterinarian and consultant, will present this dynamic workshop designed to inform and inspire those pork producers who are either currently raising or considering alternative methods of pork production. The workshop is co-sponsored by Glacierland RC&D and GrassWorks.
Participants will learn about the selection of pigs for pasture or woodlot based systems, aspects of holistic herd health, parasite and disease prevention, feeds and feeding, nutrition and management of these alternative methods of swine production.
The afternoon session will feature an accomplished chef speaking on utilization of the whole hog carcass, as well as pointers and recipes from a professional meat processor.
A highlight of the day long workshop will be the 1st annual Pastured Pork, Bacon and Brat Tasting Competition. All participants will cast their ballots after enjoying a meal of delicious, pasture-produced pork.
Workshop participants will take home a booklet filled with valuable ideas, methods and resource materials to assist them in implementing the topics covered in the workshop.
Immediately following the workshop, participants are invited to Golden Bear Farms, located 1½ miles away, for a pasture walk with Steve & Marie Deibele. Will Winter and organic ag consultant Sabino Cortez will offer ideas and observations.
Workshop pre-registration is due June 17. The workshop fee is $100 per person; $50 for spouses or other farm member; 16 and under free. Fee includes the workshop, meals and resource booklet.
